Post the summer’s biggest, baddest BBQ we fled to the mountains. Roslyn is located in the Cascade Mountains, 80 miles east of Seattle. The town was founded in 1886 as a coal mining company town and today is a sleepy hollow with a population of only 910 but serving as an important food & watering hole for the nearby Suncadia Resort. For a two-horse town, there are plenty of eateries and cocktail spots. One of our favourites is The Brick, a landmark saloon operating since 1889 and offering brews, pub grub & live music in cheery surrounds. There’s also The Heritage Distilling Company, a craft distillery that is the most awarded in North America by the American Distilling Institute— 6 years in a row from 2014-2019! Another interesting fact is they are majority owned by women and family operated. As a craft distillery they manage the entire process of making their spirits by hand - from identifying & working directly with the farmers growing the grains, to ensuring the purity of their water source, to milling the grains, making their own mash & wort, and running their own custom made stills for the best ā€Field to Flaskā€ ethos. If you have time, you can brew your own batch through their customized ā€œYour Whiskey, Your Wayā€ program. Suzie & Grandma shared a few days with us and we enjoyed some great walks & hikes. Later in the week Mark & Jenni joined us with rescue Grandson, Prince. It was great to have time with the kids!
